@Nebukadneza:ghostdub.deNebukadneza About oxygen .... Normally the top of the vat will be filled with a sea of co2, if you don't wave around like crazy, fan at it, or blow, it'll likely be minimal. The much more important parts are when transferring out to keg or bottle, but if I remember correctly you're quite well equipped on that 08:42:35
@Nebukadneza:ghostdub.deNebukadneza* About oxygen .... Normally the top of the vat will be filled with a sea of co2, if you don't wave around like crazy, fan at it, or blow, it'll likely be minimal. The much more important parts are when transferring out to keg or bottle, but if I remember correctly you're quite well equipped on that front?08:42:42
@Nebukadneza:ghostdub.deNebukadneza* what are your goals aroma-wise? And what hops do you have available or planned?08:43:19
@Nebukadneza:ghostdub.deNebukadnezaAlso, if it's a more fruity profile, you can think about using ascorbic acid which will oxidise away your oxygen more quickly than the hops oils could - with no to minimal discernable taste impact if dosed right08:44:53

@patsy:matrix.orgpatsyNebukadneza: Thanks! Well it's a 23 liters batch with 100 g simcoe and 100 g Citra. I kind of assumed it would be ok with the CO2 floating on top of the liquid but I wasn't sure about it. 10:23:09

@nagel:matrix.org@nagel:matrix.orgHas someone tried to use beetroots in a beer here? Yesterday I put some fresh beetroots in the mash, where it became very sweet and than some roasted beetroots at the end of hop cooking. But it seems that neither colour (hard to say so as it is a dark chocolate stout) nor taste changed from it.19:11:45

@patsy:matrix.orgpatsyI intend to make some Pumpkin Ale soon. Haven't done that before. Does anyone have experience?10:09:10
@neoresin:dowdell.mediaBrianyeah, mine came out okay - it was my first time brewing with pumpkin, so take that for what you will. i recall mashing with the pureed pumpkin and the yield not being great, and flow being pretty terrible, but it came out alright. tasted vaguely of pumpkin. added spices too, like nutmeg, to the fermenter. i think i just used english ale yeast.11:29:41

@neoresin:dowdell.mediaBrianyep i can see it 🙂 i did find this thread regarding the brown sugar, which i thought interesting. https://www.homebrewtalk.com/threads/brown-sugar-during-boil.581584/ several posters say that it'll "spike the OG and drop the FG" and if you're looking more for a flavor addition, it's recommended to go with "corn sugar and molasses". i like all the spice additions you'd be adding in that recipe, so 👍️ there. and yeah, that roasted butternut squash sounds delicious as an addition. please let us know how it turns out!12:08:01
@neoresin:dowdell.mediaBrian this might also be worth reading, especially that response from jfowler1 12:13:30
