I don't really care much which server they use, as long as:

  1. It is not matrix.org
  2. It is a small server (which makes 1. superfluous)
  3. It is not always the same server, which might attract attention.
* so I don't think you can pick a default homeserver to preview with for the user visiting, I think it will default to the server the room alias uses. You can only add options with via. This is for previewing on matrix.org. via is indeed also used by a client to tell their server to try and join the room with as kitsune is referring to.

not sure element will propose any of the servers via params for new accounts, so it would be the default for that element instance (probably the mozilla homeserver which requires SSO)
